There are 25,000 vines in Sepp Muster's vineyards and he knows them all. A few younger ones, "for the next generation", and more old ones, which are close to his heart. "Old vines have more substance, anything over 20 years old is more compact and multi-layered," he once explained to us. However, for vines to grow old gracefully, they also need the right environment. This is what the Musters, who have been working biodynamically for more than 20 years now, offer them on the Schlossberg, the large vineyard surrounding their winery.
